Bharwa bhindi Gujarati recipe
Bharwa Bhindi is a popular Gujarati dish made with okra that has been stuffed with a flavorful mixture of spices, coconut, and peanuts. The dish is typically served as a side dish with dal, rice, or roti.Here's a recipe to make it:
Ingredients:
- 500g fresh okra (bhindi)
- 2 tbsp oil
- 1 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/2 tsp fennel seeds
- 1/4 tsp turmeric powder
- 1/2 tsp coriander powder
- 1/2 tsp cumin powder
- 1/4 tsp red chili powder
- 1/2 tsp amchur (dried mango powder)
- Salt to taste
- Coriander leaves for garnishing
For the stuffing:
- 1/2 cup besan (gram flour)
- 2 tbsp oil
- 1 tsp cumin seeds
- 1/2 tsp fennel seeds
- 1/2 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp garam masala powder
- 1/2 tsp amchur (dried mango powder)
- Salt to taste
Instructions:
- Rinse the okra and pat them dry. Trim the ends and make a lengthwise slit in the center without cutting through the other end.
- In a pan, roast the besan on medium heat until it turns light brown and gives off a nutty aroma. Set aside.
- In the same pan, heat 2 tbsp of oil and add cumin seeds, fennel seeds, coriander powder, cumin powder, garam masala powder, amchur, and salt. Mix well and add the roasted besan. Mix until well combined and the stuffing is dry.
- Stuff each okra with the besan stuffing mixture and keep aside.
- In a separate pan, heat 2 tbsp of oil and add cumin seeds, mustard seeds, and fennel seeds. Once they start to crackle, add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well.
- Add the stuffed okra to the pan and stir gently to coat the masala on the okra. Cover and cook on medium-low heat for 10-12 minutes, stirring occasionally.
- Once the okra is cooked, remove from heat and garnish with coriander leaves.
- Your delicious Bharwa Bhindi is ready to serve. Enjoy it with roti or paratha.
