Ingredients:
- 1 cup gram flour (besan)
- 1/2 cup yogurt
- 1/2 cup water
- 1/4 tsp baking soda
- 1 tsp lemon juice
- 1 tsp sugar
- 1/4 tsp turmeric powder
- Salt to taste
- 1 tbsp oil
- Chopped coriander for garnish
- Grated coconut for garnish (optional)
For tempering:
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- 2-3 green chilies, chopped
- 1 sprig curry leaves
- Salt to taste
Instructions:
1. In a bowl, mix gram flour, yogurt, water, baking soda, lemon juice, sugar, turmeric powder, and salt.
2. Whisk until smooth and let it rest for 10-15 minutes.
3. Grease a steamer plate.
4. Pour the batter into the plate and steam for 15-20 minutes.
5. Prepare tempering by heating oil, adding mustard seeds, sesame seeds, green chilies, and curry leaves.
6. Cut the steamed Khaman into pieces and pour the tempering over it.
7. Garnish with chopped coriander and grated coconut (if using).
8. Serve with green chutney or tamarind chutney.
Tips:
- Adjust the amount of green chilies according to your taste.
- You can add a pinch of hing (asafoetida) for extra flavor.
