Anda karee (Egg Curry)
Preparation time - 30 Minutes
Serving- 4
Ingredients:
- Onion-1 (large)
- Boiled Eggs - 6
- Green chilli - 2
- Coriander leaves -1/4 cup
- Curds -2 tbsp
- Turmeric powder -1 tsp
- Red chilli powder-1.5 tsp
- Coriander powder -1/2 tsp
- Cumin powder -1/2 tsp
- Black pepper powder -1/4 tsp
- Garam masala powder -1/2 tsp
- Bay leaves -2
- Cinnamon stick -1 inch
- Black cardamom-1
- Cumin seeds -1/2 tps
- Salt to taste
- Cooking oil - 6 tbsp
Method
Boiled Eggs - 6
Make Cuts in Eggs
Add 1/4 tsp of turmeric powder
Add 1.5 tsp of red chilli powder
Fry it for 2-3 minutes on medium flame
Heat 4 tbsp of oil in another pan
Add 2 bay leaves and 1 inch cinnamon
Add one black cardamon and 1/2 tsp of cumin seeds
Add 1/2 tsp of turmeric powder
Add 1 tsp of red chilli powder
Cook it for 8-10 minutes on low flame
Cook it for a minute
Turn off the flame and let it cool down
Once the masala cools down, add curd
Now. turn on the flame again
Cook it for 8-10 minutes
Add 1 cup of water
Add salt to taste
(remember, we have already added salt in eggs)
Add the fried eggs in curry
Cook it for 6-8 minutes on low flame
Add 1/2 tsp of garam masala powder
Cook it for 2 more minutes
