Ingredients:

  • 2 cups basmati rice, rinsed and soaked for 30 minutes
  • 3 tablespoons ghee
  • 1 cinnamon stick
  • 2 green cardamom pods
  • 4 whole cloves
  • 1 bay leaf
  • 1 medium-sized onion, sliced
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt, to taste
  • 1 orange, zested and juiced
  • 2 cups water

Instructions:

  1. In a large pot, heat the ghee over medium-high heat. Add the cinnamon stick, cardamom pods, cloves, and bay leaf and stir for 1-2 minutes until fragrant.

  2. Add the sliced onion and cook for 2-3 minutes until it turns translucent.

  3. Add the ginger-garlic paste and cook for another minute until fragrant.

  4. Add the cumin seeds, coriander powder, garam masala powder, turmeric powder, and red chili powder. Mix well and cook for 1-2 minutes.

  5. Add the rice to the pot and stir for a few minutes until the rice is coated with the spices.

  6. Add the water, orange zest, orange juice, and salt. Bring to a boil.

  7. Reduce the heat to low, cover the pot and let the rice simmer for 15-20 minutes or until the water is absorbed and the rice is cooked.

  8. Fluff the rice with a fork and garnish with fresh coriander leaves and orange slices.
