Creamy Tomato and Spinach Pasta
Ingredients:
- 8 oz. penne pasta
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1 (14.5 oz.) can diced tomatoes
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups fresh spinach leaves
1/4 cup grated Parmesan cheese
Instructions:
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes (if using) and cook for 1 minute, stirring constantly.
- Add the diced tomatoes, heavy cream, salt, and black pepper. Bring to a simmer and cook for 5-7 minutes, stirring occasionally.
- Add the spinach leaves to the skillet and stir until wilted, about 2-3 minutes.
- Add the cooked pasta to the skillet and stir until coated with the sauce. Cook for an additional 1-2 minutes to heat through.
