Popular and flavorful dish called Chicken Tikka Masala.
Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-size pieces
- 1/2 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 1 teaspoon ground ginger
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 can (14.5 oz) crushed tomatoes
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
- In a large bowl, mix together the yogurt, lemon juice, cumin, paprika, ginger, salt, cinnamon, and cayenne pepper. Add the chicken and stir until well coated. Cover and refrigerate for at least 1 hour, or overnight.
- Preheat the oven to 400°F. Thread the marinated chicken onto skewers and place on a baking sheet. Bake for 20-25 minutes, or until the chicken is cooked through and slightly charred.
- In a large skillet, heat the oil over medium heat. Add the onion and cook until soft and translucent, about 5 minutes. Add the garlic and ginger and cook for another minute.
- Add the crushed tomatoes to the skillet and bring to a simmer. Cook for about 10 minutes, stirring occasionally, until the sauce has thickened.
- Stir in the cream and season with salt and pepper to taste. Add the cooked chicken to the sauce and stir to coat.
- Garnish with fresh cilantro and serve with rice or naan bread.
